The difference between ordinary and extraordinary--is that something extra.
The holiday season is one of my favorites in Vermont, because you can behold the generosity of so many people. It is in the true spirit of giving, that the true blessings of
life come back to us in so many ways.
I would like to share with you a recipe I learned from an old family friend that I love
preparing and setting at my holiday table every year. Enjoy!
HOLIDAY SPICE CAKE
1/2 cup shortening
11/2 cups sugar
2 eggs
2 cups flour
2 teaspoons baking powder
1/4 tsp baking soda
1/2 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp nutmeg
1 can tomato soup
1 cup chopped walnuts
1 cup raisins (dust with flour) |
CREAM CHEESE FROSTING
13-oz package cream cheese
21/2 cups confectionary sugar
1/2 tsp vanilla
1-2 tbsp milk to thin |
| Combine and mix together. Bake at 375° for 30 minutes in two 8-inch layer pans. Let cool and frost. |
In the spirit of the giving season, Bryan and I are making donations to Committee on Temporary Shelter, Sara Holbrook Center, Burlington Emergency Food Shelf, Visiting Nurse Association, Boys & Girls Club of Burlington, Women Helping Battered Women, King Street Area Youth Center, Greater Burlington YMCA, and the Flynn Theater.
Beginning November 27 Catamount Family Center, a Vermont treasure, re-opens for you to go and select the Christmas tree of your choice. The horse-drawn ride out to get the tree and back makes this a wonderful memory. While you’re there, check out their cross country trails—they’re fantastic!
